Curtis made me my favorite cookies, gluten and lactose free! I'm going to have a little play around with this recipe and see if I can make them healthy. Not that they are that unhealthy it's just I could eat them everyday which isn't so healthy!
INGREDIENTS|
175g dairy free butter
175g demerara sugar
50g golden syrup
50 agave nectar
75g gluten free flour
half a tsp bicarbonate of soda
250g gluten free oats
1 tsp of cinnamon powder
1 tsp of ginger powder
1 egg beaten
2 tbsp of boiling water
100g of dried fruit or raw chocolate
'If you're not a fan of ginger or cinnamon, try a different flavour like vanilla or cacao powder'.
Pre heat the oven to 180 degrees or gas mark 4.
Line a baking tray with grease proof paper.
Add butter, sugar, golden syrup, and agave into a pan and heat on a medium heat until melted.
Take it off the heat and add the flour, oats, bicarbonate of soda, cinnamon, ginger and berries.
Mix together.
Then add the egg and water and mix together.
Leave to cool, once cooled add to baking tray in small dollops.
Bake in the oven for 12-15 minutes.
Leave them to cool then eat them all up!
