LEEK AND POTATO SOUP | HEALTH BENEFITS


INGREDIENTS
2 leeks
2 potatoes
1 shallot
500ml filtered water + 1 vegetable stock cube
pinch of pepper
pinch of chili powder

Steam leek, shallot and potatoes until cooked, don't over cook them or you'll destroy the nutrients.
Pop them into a high speed blender, add boiling water to your stock cube and add to the blender. Blend all ingredients together.
Pop your blended mix into a saucepan add your pepper and chili powder (optional) heat for a couple of minutes until its steaming and enjoy!

BENEFITS

LEEKS - They're great for weight loss, they're high in folate which is great especially when pregnant, they're known to fight cancer, they're an anti-inflammatory, full of antioxidants and they contain lots of vitamin C and K.


POTATOES- Potatoes improve brain function, they are really high in fibre, they relieve stress and are also an anti-inflammatory.
